Canotto Lab, last updated 9 September 2026.
This is a free tool for working out pizza dough. Use it as you like. It comes with no warranty, and the numbers it produces are a starting point for your own judgement, not instructions to follow blindly.
What this is
Canotto Lab is a free, open source calculator and bake log. There is no account, no subscription and nothing to buy. It is offered as it is, and it may change or stop being available at any time.
Your data is yours
Your recipes and bakes are stored in your browser, and in your own Google account if you choose to sync. We claim no ownership of anything you write and we have no copy of it. What we do and do not collect is set out in the privacy statement.
Because your library lives in your browser, clearing your browser data will delete it. Downloading the JSON backup is the way to keep it, and doing so is your responsibility rather than ours.
No warranty
The app is provided "as is", without warranty of any kind, express or implied, including fitness for a particular purpose. Fermentation depends on your flour, your kitchen, your fridge and your hands. Timings and quantities here are estimates from a model, and a model is a simplification. Taste, look and judge for yourself.
To the extent the law allows, no liability is accepted for any loss arising from use of the app, including lost data or a disappointing pizza.
Food safety
Nothing here is food safety advice. Dough held at room temperature for long periods, and anything involving raw ingredients, is your call and your responsibility. Follow the food safety guidance that applies where you live.
Fair use
Please do not attempt to disrupt the service or inflate the usage count, which is the only number the app collects and the only thing worth distorting. Beyond that there is nothing to abuse.
Licence and source
The source is public and carries its own licence, which governs reuse of the code. See the repository.
